8 good quality sausages
1-2 tbsp vegetable oil
225g (8 oz) plain flour
250ml (8 fl oz) milk
salt and pepper to taste
Preheat the oven to 200°C /400°F/gas mark 7.
Pour the oil into a baking dish, and add the sausages. Bake for 5-10 minutes until they are just taking on a hint of colour.
Whisk together the flour, eggs and milk to a smooth batter, and season with salt and pepper.
Remove the baking dish from the oven, and pour in the batter. Return to the oven, and bake for 35 minutes, or until the centre is risen and browned. Serve immediately with gravy and freshly cooked vegetables. The centre may drop a little on cooling, this is normal.
As a variation, you could add herbs such as rosemary or thyme to the batter, to compliment the sausages you may have chosen.
