110g caster sugar, plus extra for sprinkling
350g plain flour
Cream together the butter and sugar together until smooth.
Work in the flour to get a smooth paste, working it in in 2-3 batches is easiest. Turn on to a work surface, press down and gently roll out to a thickness of about half an inch.
Cut into desired shapes, I cut it into fingers with the aid of a pizza cutter. Place onto a baking tray, prick with a fork if wanted and sprinkle with caster sugar. Chill in the fridge for 20 minutes and put the oven on to preheat at 170°C fan/190°C/375°F/Gas 5.
Bake in the oven for 15-20 minutes, or until pale golden-brown. Set aside to cool on a wire rack.
