454g pack of good quality sausages, your choice of flavour
375g ready rolled puff pastry
1 egg, beaten
Heat oven to 200°C/fan 180°C/400°F/gas 6.
Slit the sausages down their length, and discard the skins. Place the sausage meat into a bowl and squish together.
Take the puff pasty and cut lengthwise into two equal strips.
Divide the sausage meat into two equal portions and place along each of the two pastry strips.
Roll the pastry over the sausage meat, you can brush some of the egg along the seal to help it stay closed.
Brush the two rolls with the beaten egg and cut into desired portion sizes.
Place on a baking sheet in the preheated oven for 25-35 minutes, until the pastry is puffed and golden and the sausage cooked through. Serve warm or cold.
