3 cups dry ingredients (I used 2 cups rolled oats, 1/2 cup chopped walnuts, 1/2 cup chopped hazelnuts)
1 tsp cinnamon (optional)
1/4 cup vegetable oil
1/4 cup honey or maple syrup
(Mix in any dried fruits after baking, if desired)
Preheat the oven to 150°C/130°C fan/300°F/gas 2.
Mix dry ingredients and spice together in a large bowl.
In a smaller bowl, mix together the oil and honey/syrup, then mix into the dry ingredients.
Spread the mix onto two baking sheets and bake for 15 minutes. If you like it a little crisper, stir and return to the oven for a further 5-10 minutes. Scrape onto a flat tray to cool, then store in an airtight container and eat within a couple of weeks. You can also freeze individual portions for a quick dessert or snack any time.
