450g fruit of your choice (we used apples and mixed red berries)
50g light brown sugar (adjust to taste if your fruit is very sweet or sour)
zest of a lemon (optional)
175g plain flour
75g light brown sugar
pinch of mixed spice (optional)
Preheat the oven to 180°C/gas 4/350°F.
If you are using fresh fruit, prepare the fruit and stew lightly with the sugar in a saucepan until softened but still holding its shape. If using tinned fruit or defrosted frozen fruit (which is already soft), simply toss in the sugar. Place softened fruit in an ovenproof dish and sprinkle lemon zest over. Put to one side.
Rub the butter into the flour (blitz in a food processor if you have one). Rub in the sugar and spice if using (or add to the food processor and blitz).
Sprinkle the crumble mixture over the fruit and bake for 40 minutes or until the top is lightly golden.
Serve with ice cream, cream or custard. If you have leftovers, why not try it cold for breakfast with yogurt?
