225g self raising flour
225g mixed fruit of your choice
1/3 cup milk (80ml)
1 tsp mixed spice
Line a 6" cake tin, buttering the paper. Wrap paper around the outside as well, if you are concerned the outside may become overdone, although this is not necessary. Preheat the oven to 180°C/160°C fan/350°F/Gas 4.
Put the fruit into a smallish bowl and cover with hot, strong tea (or plain boiling water with a dash of vanilla extract if you prefer) and leave to soak for a few minutes.
Rub the butter into the flour until it resembles breadcrumbs, then stir in the sugar, spice and drained fruit.
Add the egg and milk and mix well.
Put mixture into the prepared pan and bake for around one hour, or until a skewer inserted into the middle of the cake comes out clean.
