This isn't really a recipe as such (there are plenty out there) as I have cheated and bought a jar of ready made Hollandaise sauce - quick and easy for a weekend breakfast.
2 English muffins (and enough butter to spread on them)
4-8 slices of bacon, pancetta, prosciutto - what ever you like best (and how much you like)
Jar of Hollandaise sauce (you will need about 4 tbsp)
Preheat the grill to its highest setting. Boil a kettle of water. Decant 4-5 tbsp of Hollandaise into a small bowl to microwave later (or into a small saucepan if using the hob). Put a large-ish saucepan on the hob and half fill with the boiling water and turn the heat to a medium temperature.
Grill the bacon (or whatever you are using), then transfer to a plate and keep warm.
Put the eggs into the gently simmering water and poach for 3-4 minutes.
Split the muffins and put under the grill to lightly toast.
Warm the sauce gently.
Warm the plates.
Butter the muffins and place them on the plates, then top each half with one or two slices of bacon.
Put a poached egg on top of each muffin half and then spoon over the hollandaise, covering the egg. You could garnish with a little black pepper or a sprinkling of herbs such as chives or parsley. Serve immediately.
