1 cup (115g) oats
1 cup (160g) plain flour
1 cup (225g) sugar
3/4 cup (60g) dessicated coconut
1 tbsp golden syrup
1 tsp bicarbonate soda
2 tbsp boiling water
Combine the oats, flour, sugar and coconut. In a medium pan, melt the butter and syrup. (A tip for adding the syrup easily is to put a metal tablespoon into a mug of boiled water to heat it, then use it to spoon out the syrup - you will find the syrup falls off the spoon with little residue left). Combine the bicarbonate of soda and boiling water, add to the pan - it will foam up considerably (kids love watching this part!).
Stir the butter mixture into the dry ingredients.
Place balls about the size of walnuts on a greased (or non-stick) baking sheet.
Bake at 150°C/gas 2/300°F for 20 minutes until golden brown. Cool on the baking sheet.
